Blueberry & Ricotta pancakes

Cold Winter mornings require warm comfort food and this recipe is perfect to warm you up and keep you cosy! Why not give them a go next weekend?Ingredients
1 cup flour
1 good tsp baking powder
Pinch of salt
4 eggs separated
250g ricotta cheese
3/4 cup milk (you could substitute with Buttermilk for a creamier version)
1 cup of fresh or frozen blueberries
Olive oil for cooking
Topping
Fruit to garnish - mixed berries and banana
Honey or maple syrup
Beat the egg whites until they form soft peaks. Sift the dry ingredients together into a bowl, mix the ricotta with the milk and egg yolks. Add the dry ingredients, mix well, then carefully fold in eggs whites.
Lightly grease a hot saucepan and spoon generous amounts of batter into the pan. Drop 6-10 berries on each pancake while cooking. Cook over medium heat (if it's too hot the pancakes will burn easily) for about 3 minutes on the first side and 1-2 minutes once turned. Keep each pancake in the oven until you have enough for a stack for yourself (and whoever is joining you!). Top your pancake stack with honey or maple sauce and sprinkle with fresh berries and banana.
